Marinade
 500 g lamb or chicken, thinly sliced
 3 tbsp olive oil
 1 tsp cumin
 1 tsp coriander
 1 tsp paprika
 1 tsp allspice
 1 tsp garlic powder
 1 tsp salt
 0.50 tsp black pepper
 0.50 tsp cinnamon
 2 tbsp lemon juice
Tahini Sauce
 100 g tahini
 2 tbsp water
 1 tbsp lemon juice
 1 clove garlic, minced
 salt
Wrap Ingredients
 4 pita bread or flatbread
 1 cup lettuce, shredded
 1 sliced
 0.50 sliced
 0.50 cup pickles, sliced

In a large bowl, combine the sliced meat with olive oil, cumin, coriander, paprika, allspice, garlic powder, salt, black pepper, cinnamon, and lemon juice. Mix well to coat the meat evenly. Cover and marinate for at least 1 hour or overnight in the refrigerator for best results.

Cooking the Meat

Preheat your grill or skillet over medium-high heat. Once hot, add the marinated meat in batches, ensuring not to overcrowd the pan. Cook for about 5-7 minutes on each side, or until the meat is browned and cooked through. Remove from heat and let it rest for a few minutes before slicing into smaller pieces.

Making the Tahini Sauce

In a small bowl, whisk together tahini, water, lemon juice, minced garlic, and a pinch of salt until smooth. Adjust the consistency by adding more water if needed.

Assembling the Wraps

On each pita or flatbread, layer the cooked meat, shredded lettuce, sliced tomatoes, cucumbers, and pickles. Drizzle generously with tahini sauce. Roll the bread tightly around the filling and serve immediately.
