 4 cups sweet potatoes, peeled and cut into cubes
 3 tbsp olive oil
 1 tsp sea salt
 1 tsp black pepper
 2 tbsp fresh rosemary, chopped
 2 tbsp fresh thyme, chopped
 1 tbsp honey (optional)

Preheat your oven to 425°F (220°C). This high temperature will help caramelize the sweet potatoes beautifully.

In a large mixing bowl, combine the cubed sweet potatoes, olive oil, sea salt, black pepper, rosemary, and thyme. Toss everything together until the sweet potatoes are evenly coated.
