For the Fritters
 250 g dried chickpeas (soaked overnight)
 1 onion, roughly chopped
 2 garlic
 1 fresh parsley, chopped
 1 fresh cilantro, chopped
 1 tsp ground cumin
 1 tsp ground coriander
 1 tsp baking powder
 1 tsp salt
 ½ tsp black pepper
 ¼ tsp cayenne pepper (optional)
 500 ml vegetable oil (for frying)
For Serving
 200 g tahini sauce
 1 tomato, diced
 1 cucumber, diced
 1 fresh parsley, for garnish

Drain and rinse the soaked chickpeas thoroughly. Place them in a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, black pepper, and cayenne pepper. Pulse until the mixture is coarsely blended but not pureed.

Transfer the mixture to a bowl and let it sit for about 30 minutes. This helps the flavors meld together and makes it easier to shape into fritters.

In a deep skillet or pot, heat the vegetable oil over medium-high heat. You can test if the oil is ready by dropping a small piece of the mixture into it; if it sizzles, it’s time to fry.

Using your hands, form small balls or patties from the chickpea mixture, about the size of a golf ball.

Carefully drop the fritters into the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy.

Once cooked, remove the fritters with a slotted spoon and drain them on paper towels to absorb excess oil.

Serve the fritters warm with tahini sauce, diced tomatoes, cucumbers, and garnish with fresh parsley.
