Spice and Herb Mix
 1 cup toasted sesame seeds
 ½ cup hazelnuts or walnuts
 1 tbsp ground coriander
 1 tbsp ground cumin
 1 tbsp dried thyme
 1 tbsp dried mint
 1 tsp sea salt
 ½ tsp black pepper
Preparation Steps
1

In a dry skillet over medium heat, toast the sesame seeds until they are golden brown and fragrant, about 3-5 minutes. Stir frequently to prevent burning.

2

Add the hazelnuts or walnuts to the skillet and toast for an additional 2-3 minutes until they are lightly browned. Remove from heat and let cool.

3

In a food processor, combine the toasted sesame seeds, nuts, ground coriander, ground cumin, dried thyme, dried mint, sea salt, and black pepper.

4

Pulse the mixture until it reaches a coarse consistency, being careful not to over-process into a paste. You want to maintain some texture.

5

Transfer the spice mix to a serving bowl. It can be served immediately, or stored in an airtight container for later use.

Notes

Store the spice mix in an airtight container in a cool, dry place for up to 3 months. Serve with fresh bread and high-quality olive oil for dipping.
