Fresh Ingredients
 2 cups diced tomatoes
 1 cup diced cucumber
 1 red onion, finely chopped
 ½ cup fresh parsley, chopped
 ¼ cup fresh mint, chopped
Dressing Ingredients
 ¼ cup extra virgin olive oil
 2 tbsp fresh lemon juice
 1 tsp salt
 ½ tsp black pepper
