Freshly baked Palestinian flatbreads topped with zaatar and cheese, served warm.

Dough Ingredients
 4 cups all-purpose flour
 1 tsp salt
 1 tsp sugar
 2 tsp instant yeast
 1.50 cups warm water
Topping Ingredients
 0.50 cup zaatar spice blend
 0.50 cup olive oil
 2 cups shredded mozzarella cheese
1 lb ground lamb or beef (optional)
 1 tbsp ground sumac (optional)
Making the Dough
1

In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast. Mix well.

2

Gradually add the warm water to the dry ingredients, stirring until a dough begins to form.

3

Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.

4

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preparing the Toppings
5

While the dough is rising, prepare your toppings. In a small bowl, mix the zaatar with olive oil to create a paste.

6

If using meat, season the ground lamb or beef with spices of your choice, and cook it in a skillet until browned.

Assembling and Baking
7

Preheat your oven to 475°F (245°C). Once the dough has risen, punch it down and divide it into 8 equal pieces.

8

Roll each piece into a flat circle about ¼ inch thick on a floured surface.

9

Transfer the rolled dough onto a baking sheet lined with parchment paper.

10

Spread a generous layer of the zaatar paste over the dough. For cheese lovers, sprinkle shredded mozzarella over the top.

11

If desired, add cooked ground meat on top of the cheese.

12

Bake in the preheated oven for 10-15 minutes, or until the edges are golden brown and the cheese is bubbling.

13

Remove from the oven and allow to cool slightly before serving.

Notes

Best enjoyed fresh. Store leftovers in an airtight container for up to 2 days. Reheat in the oven for best results.
