In a large mixing bowl, combine the all-purpose flour, salt, sugar, and instant yeast. Mix well.
Gradually add the warm water to the dry ingredients, stirring until a dough begins to form.
Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
While the dough is rising, prepare your toppings. In a small bowl, mix the zaatar with olive oil to create a paste.
If using meat, season the ground lamb or beef with spices of your choice, and cook it in a skillet until browned.
Preheat your oven to 475°F (245°C). Once the dough has risen, punch it down and divide it into 8 equal pieces.
Roll each piece into a flat circle about ¼ inch thick on a floured surface.
Transfer the rolled dough onto a baking sheet lined with parchment paper.
