For the Kebab Mixture
 500 g ground lamb
 1 cup finely chopped onion
 4 garlic, minced
 1 tbsp ground cumin
 1 tbsp ground coriander
 1 tsp ground cinnamon
 1 tsp allspice
 1 tsp salt
 1 tsp black pepper
 2 tbsp fresh parsley, chopped
 2 tbsp olive oil
For Serving
 4 pita bread
 1 cup yogurt sauce or tahini
 1 cup fresh vegetables (tomatoes, cucumbers, etc.)
Prepare the Kebab Mixture

In a large mixing bowl, combine the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, allspice, salt, black pepper, chopped parsley, and olive oil. Mix well using your hands until all ingredients are thoroughly combined.

Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Shape and Grill the Kebabs

Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Take the kebab mixture out of the refrigerator. Wet your hands with water and shape the mixture onto the skewers, forming long, oval shapes.

Place the skewers on the hot grill and cook for about 10-15 minutes, turning occasionally until they are browned and cooked through.

Serve

Remove the kebabs from the grill and let them rest for a few minutes. Serve warm with pita bread, yogurt sauce or tahini, and fresh vegetables.
