In a large mixing bowl, combine the ground lamb, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, allspice, salt, black pepper, chopped parsley, and olive oil. Mix well using your hands until all ingredients are thoroughly combined.
Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Preheat your grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Take the kebab mixture out of the refrigerator. Wet your hands with water and shape the mixture onto the skewers, forming long, oval shapes.
